


| Racking by gravitity and decanting |

Every 6 months the wine is manually racked by means of the traditional system. The manual stacking system of 5 heights allows us to make rackings by the traditional technique of gravity and decanting from barrel to barrel, cleaning the wine naturally, without the need of filtration or clarification which would damage the quality of our product. A 5 cm small hole at the bottom of the barrel, called "falsete", allows us to get the clean wine and leave all the natural sediments or lees in the barrel. So, with a decantation, without agitation or pumping, we get a clean wine without abuse and respecting the wine's character. This process is expensive and needs more time than the machining system, but again, we believe that nothing is enough for the result we seek, a natural wine with the highest quality. |
